Francisco Romero de Ávila, father of Santiago Romero de Ávila, was affectionately known in our family as 'Abuelo Paco.' He was the one who passed down to our father the knowledge accumulated over generations.
Among the inherited practices is the winemaking process in amphoras: a traditional vinification technique that we continue to use in our winery to craft our wines.

A Heartfelt Tribute
For us, it is essential to determine the origin, vintage conditions, and grape variety of each wine with the highest possible precision, as no two years are ever the same. As Abuelo Paco used to say, 'No harvest is ever identical to the previous ones, and this is reflected in the different wines we create.'
His words taught us to see each generation of our family as a new harvest—where, despite sharing the same knowledge passed down over the years, each generation contributes its own uniqueness.
Abuelo Paco is our way of safeguarding our grandfather’s winemaking heritage, holding onto his teachings, his wisdom, and everything we refuse to let be forgotten.

Tempranillo and Syrah vines were carefully selected for its production.
Each varietal is fermented separately and aged for 12 months in amphoras. In pursuit of balance, the wine ages for 15 months in 225-liter oak barrels, the wine refines for another year in the bottle, achieving its final harmony.
A process that adds complexity, character, and a unique balance to the wine.

Timeless Elegance
It presents a clean and bright cherry-red color with good depth and dense tears. On the nose, it stands out for its finesse, offering a perfect balance between ripe fruit and notes of cocoa, roasted coffee, and toasted aromas. On the palate, it is exceptionally well-balanced, with silky, persistent tannins that lead to a long and elegant finish.
The Perfect Pour
Best enjoyed slightly chilled, between 16°C and 18°C.
Gastronomic Harmony
This wine pairs perfectly with a variety of rich and flavorful dishes. It enhances the creaminess and depth of aged cheeses, while its balanced structure complements the hearty textures of legumes. Traditional stews, with their slow-cooked complexity, find a perfect match in its depth and character. Grilled meats, from tender lamb to smoky beef cuts, are elevated by its refined tannins and lingering finish, creating a truly harmonious dining experience.

Me estoy aficionando a los vinos de La Mancha, fuera de los clásicos Rioja y Ribera. Se están haciendo vinos muy interesantes en esa zona y muchas otras de España. Sólo hay que informarse y buscarlos.
